Jenn's Secret Pancake Recipe

I've tried several pancake recipes throughout the years. They were okay, but they weren't worth keeping. My friend Jenn gave me this recipe several years ago and I haven't bothered with another pancake recipe since. We've only modified it a little. We hope you enjoy. 


Jenn's Secret Pancake Recipe
4 Eggs
4 Cups Flour
3 Cups Milk
6 Tbsp Sugar
1/2 cup Oil
5 teaspoons Baking Powder
1/2 teaspoon salt

Warm your griddle over medium heat. Blend the ingredients in a large bowl until smooth. The batter can be slightly lumpy. Once the pan is warm, coat the pan with a little butter to prevent sticking. Use 1/3 cup to pour each pancake out. Cook for several minutes until the bubbles stop sinking in and hold their shape. Flip and cook a few more minutes on the other side. We use a wisk but you can use beaters if you want. 


These bubbles are holding their shape and are not sinking in. It is time to flip.



Golden Brown and Delicious.


Our other favorites are to put juiced Strawberries (Strawberry and Granulated sugar mixed together and stir occasionally) with the syrup or with Whip Cream. After the pancakes are cooked, you can also spread butter on top and sprinkle a cinnamon/sugar mixture on top. They melt in your mouth. 


This recipe makes enough for our large family. 

Halfsies
2 eggs
2 cups flour
1 1/2 cups milk
3 Tbsp sugar
1/4 cup oil
3 tsp baking powder
1/4 tsp salt

Mix well and cook over medium heat on a griddle, flipping to cook both sides.

Caramel Breakfast Syrup


Several years ago we started making homemade syrup for Breakfast. One of our favorite recipes uses ingredients we don't typically carry in the house. I received this recipe a couple of years ago from my friend Kim for Christmas. I think it has a Caramel taste to it and a nice brown color. It tastes more like dessert than your average store bought syrup. We make this all the time and love this Caramel Breakfast Syrup. We eat it all the time with Waffles, Pancakes, French Toast, and German Pancakes. 


Caramel Breakfast Syrup
1 cube butter (real)
1 cup packed brown sugar
1/2 cup heavy cream
To add later:
1/2 tsp baking soda
1/2 tsp vanilla

Grab a large and/or tall sauce pan. This syrup bubbles up when you add the baking soda and almost doubles in size. Melt the butter in a sauce pan over medium heat. (The reason you see 2 cubes of butter in the picture is because we always double it.) 


Once the butter is melted some, add the brown sugar and heavy cream and stir well.


Continue to stir as the butter melts. Continue to heat over medium heat to bring it to a boil. 


Boil for 1-3 minutes and then remove from heat. Stir in the baking soda and vanilla. The syrup will bubble up and become frothy. 



Set aside and stir occasionally until your breakfast food is ready to be eaten. The syrup will smooth out and return to it's normal consistency. 


Serve and Enjoy!

Set aside and stir occasionally until your breakfast food is ready to be eaten. The syrup will smooth out and return to it's normal consistency. You can store it an an air tight container in the refrigerator for a week. Just reheat and it will taste just as amazing as when you first cooked it.

German Pancakes


My mom made these German Pancakes when I was growing up, and my whole family loved them. We've continued making them for our kids and now they love them as well. We love having another option in the morning besides Pancakes and Waffles. I love that you pop it in and let it bake instead of the constant flipping and cooking you have to do with other breakfast foods. 


German Pancakes
6 Eggs
1 Cup Milk
1 Cup Flour
1/2 tsp Salt
6 Tablespoons Butter

Preheat the oven to 400. Cut the butter into individual Tablespoons and place in a 9 x 13 pan. In a blender, add the eggs, milk, flour, and salt. Blend well. This is best done in a blender instead of with beaters. It doesn't rise correct if done with beaters. Place the pan in the oven to melt the butter. Once the butter is melted, pour in the blended batter and bake for 25 minutes. We love this best with syrup.

Oh Boy Waffles


I got this recipe from my mother a few years back. It works perfectly for us so I've never had to look for another one. My oldest 2 kids make it the most, so much that they've memorized it. We love these waffles. 

Oh Boy Waffles
2 1/2 Cups Flour
3/4 teaspoon salt
4 teaspoons Baking Powder
1 1/2 Tablespoons Sugar
2 beaten eggs
2 1/4 Cups Milk
 3/4 cup oil (or melted shortening)

Start up your waffle maker to preheat. Combine the dry ingredients in a large bowl. Add the eggs, milk, and oil and beat until smooth. This batch makes enough to feed a family of 8 with left overs, and my kids EAT waffles. 

(We use Aluminum Free Baking Powder. We've had some experience with bitterness when using the kind that has Aluminum in it. Ever since we switched we haven't had a problem with it)




Pour on your favorite syrup or serve with fresh berries and whip cream.
